What it is:

100% Gamay aged in concrete. From the Sonoma region of California, USA.

Why we like it:

Pax is at the forefront of the modern California winemaking movement. The winery decided to pursuit lesser known grape varieties from lesser known vineyards. Their push towards higher elevation and more coastal influence has lead to a winemaking style that aims for balance and drinkability. During a time when the prevailing wisdom was to put as much new oak on the wines as possible Pax broke out and decided to replicate the wines they enjoyed from France. They limit their new oak, use whole cluster fermentation and push for well balanced wines.
